Parsons Farmers Market one of many activities in the Park

PARSONS, KS— If you are headed to celebrate the official opening of the Frisco Trail on Tuesday, make it a point to stop in and check out all that the Parsons Farmer’s Market has to offer. At the Parsons Farmers Market, you’ll not only have your choice of the finest greens and a wide variety of products, but you will also support local growers as you find your favorite fruits and vegetables and handmade craft items.

The market is held on Tuesdays from 4-6 p.m. and Saturdays from 7-10 a.m. Vendors from a 40 mile radius participate in the weekly market.

As produce continues to come into the market, one of the biggest questions is, “what can I do with all of my zucchinis?” This week’s recipe will give market goers a fresh idea for an old vegetable.

Zucchini Dip

Finely shred enough zucchini to make 1/2 cup. Place in strainer and press out moisture. Blend with 1 cup plain low fat yogurt, and 1 minced clove of garlic, or 1/8 teaspoon garlic powder. Add a dash of curry powder or other seasoning and chill for at least 1 hour. Stir before serving. Serve with crisp raw vegetables or crackers.
